Refreshing tzatziki

Be it over potatoes, with grilled veg or on a baguette, this refreshing yogurt sauce is a must have for every barbecue party!

  • 500g plant yogurt (unsweetened)
  • 1 cucumber
  • 2-3 cloves of garlic
  • 1 large tblsp minced mint
  • 1 large tblsp minced parsley
  • Juice of half a lime
  • Salt and pepper

  1. Optional, but recommended: Line a colander with a clean tea towel and pour in the yogurt. Place the colander into a bowl to catch any liquid, cover and place everything into the fridge overnight.
  2. Cut the cucumber the long way into four pieces and scoop out the seeds. Grate the cucumber. The easiest way to do this is to use a food processor, but you can also use a cheese grater or simply finely chop it using a kitchen knife.
  3. Lightly salt the grated cucumber and pour into a colander lined with a clean kitchen towel. Place into the sink for 15 minutes to drain any excess liquid. If you have a really juicy cucumber, you can even squeeze out more liquid.
  4. Mince the garlic and herbs and mix with the yogurt and cucumber. Season with salt and pepper.
  5. Add the lime juice just before serving.

Gutt ze wëssen

Don't add the lime juice until just before serving. The acidity may cause the yogurt to curdle overtime. If that happens, the sauce is still edible, it just won't look quite as nice.
