Couscous salad with almonds and pomegranate seeds

Roasted almonds, juicy pomegranate seeds and a minty lemon dressing transform this couscous salad into something special.

  • 200g couscous (dry)
  • 50g almonds
  • Seeds from half a pomegranate
  • Juice of one and a half lemons
  • 2 tblsp olive oil
  • 1 large tblsp of minced mint
  • 1 large tblsp of minced parsley
  • Salt and pepper

  1. Bring 300ml of salted water to a boil and pour in the couscous. Give it a stir and remove from the heat. Set aside and let cool completely.
  2. Roughly chop the almonds and roast them in a dry pan for a few minutes. Be careful not to burn them.
  3. To make the dressing, stir together the lemon juice, olive oil and herbs. Season with salt and pepper.
  4. Once cold, fluff the couscous with a fork and pour into a large bowl. Add the dressing, almonds and pomegranate seeds.
