200g couscous (dry)

50g almonds

Seeds from half a pomegranate

Juice of one and a half lemons

2 tblsp olive oil

1 large tblsp of minced mint

1 large tblsp of minced parsley

- Bring 300ml of salted water to a boil and pour in the couscous. Give it a stir and remove from the heat. Set aside and let cool completely.
- Roughly chop the almonds and roast them in a dry pan for a few minutes. Be careful not to burn them.
- To make the dressing, stir together the lemon juice, olive oil and herbs. Season with salt and pepper.
- Once cold, fluff the couscous with a fork and pour into a large bowl. Add the dressing, almonds and pomegranate seeds.
