Hot and sour soup with tofu

A salty, sour soup that packs a punch. This Asian-inspired broth with flavourful mushrooms and fresh ginger makes for a great starter.

  • 1 tblsp sesame oil
  • 2 cloves of garlic
  • 2 tsp minced ginger
  • 2 tsp chilli sauce (i.e. sriracha)
  • 50 ml rice wine vinegar
  • 2 litre water
  • 1 tblsp corn starch
  • 100g bamboo shoots
  • 1 tsp miso paste
  • 3 tblsp soya sauce
  • 200g tofu
  • 200g shiitake mushrooms

  1. Slice the mushrooms. Heat sesame oil in a large saucepan and fry the mushrooms. After a few minutes, add the garlic and ginger.
  2. Pour over the water and season with the rice wine vinegar, miso paste, soya sauce and chilli sauce. Cook for a few minutes.
  3. In a small bowl, mix the corn starch with a bit of cold water. Pour into the soup and cook until it thickens.
  4. Before serving, cube the tofu and add it to the saucepan along with the bamboo shoots.
