Carrot ginger soup

Give carrots the spotlight they deserve with this carrot ginger soup before they rot away in the bottom drawer of your fridge.

  • 600g carrots
  • 150g red split lentils
  • 1 tblsp sesame oil
  • 2 cloves of garlic
  • 2 tblsp ginger (finely diced)
  • 1 litre vegetable broth
  • 1 tblsp soya sauce
  • 1 tsp rice wine vinegar

  1. Clean and chop carrots, garlic and ginger.
  2. Meanwhile, heat up sesame oil in a saucepan. Lightly fry the garlic and ginger.
  3. Add the carrots, lentils and vegetable broth and bring to a boil. Simmer until the carrots are soft and the lentils cooked. This should take around 20 minutes.
  4. Blend the soup until smooth and season with soya sauce and rice wine vinegar.
