2 cloves of garlic

2 tblsp ginger (finely diced)

1 litre vegetable broth

1 tblsp soya sauce

1 tsp rice wine vinegar

- Clean and chop carrots, garlic and ginger.
- Meanwhile, heat up sesame oil in a saucepan. Lightly fry the garlic and ginger.
- Add the carrots, lentils and vegetable broth and bring to a boil. Simmer until the carrots are soft and the lentils cooked. This should take around 20 minutes.
- Blend the soup until smooth and season with soya sauce and rice wine vinegar.
