Yellow coconut rice

Warming, spiced and healthy! This curried coconut rice takes just 30 minutes to prepare and makes for a great weeknight dinner.

  • 200ml coconut milk
  • 160g rice
  • 200ml vegetable stock
  • 100g green peas
  • 0.5 onion
  • 1 carrot
  • 1 tablespoon curry powder
  • 1 bay leaf
  • Salt and pepper

  1. Finely dice the onion and carrot. Make sure to cut the carrots nice and small - about the size of a pea. Then fry both in a bit of oil.
  2. Add the rice and curry powder and let it heat up for a little bit so that the flavours can mix.
  3. Add the coconut milk, vegetable stock and bay leaf and cook until all the liquid has been absorbed and the rice is fully cooked.
  4. A few minutes before finishing, add the green peas. Remove bay leaf before serving.
